Vegan Egg and Mashed potato

My first time using the new Vegg (Vegan egg yolk).

I made mash potato with spinach and fried onion and garlic.

To make the the egg yolk you need the following;

Vegg (available online)

Calcium Chloride

Food processor / electronic mixer

Measuring jug.


Mix 1 tbsp of Vegg with 1/4 cup of water in the food processor

then put 1 gram of Calcium Chloride with 100ml of water and dissolve completely.

use a champaign flute – pour the above mixture into the flute and the pour it out again.

Then poor the vegg mixture into the flute lightly coated with the calcium chloride add a tsp of the calcium chloride mixture to the flute with the vegg and gentle swirl it around making it into a spherical shape. Leave it in the mixture until it is the right texture (the longer you leave it the thicker the skin.

Then place the egg yolk in a water bath – then finally rince it thoroughly before serving.

Vegan Crêpes

Here is a very simple but delicious way of making vegan crepes or pancakes!

Simply mix the following

  • 1 cup of flour
  • half a cup of water
  • half a cup of soya milk
  • 1/4 tsp of salt
  • 1 tsp of sugar or other sweetener ie. maple syrup or agave
  • Optional tb of margarine


Mix it until it is a smooth slightly liquid mixture, then heat up a pan I tend to use a small amount of margarine in the pan before each crepe but any oil should work.

Simple cook it for a couple of mins and then flip it.

Mixture is good for 4/5 crepes.


Ideas for fillings: Cinnamon sugar and lemon juice, melted dark chocolate and banana served with a couple of balls of Swedish Glace ice-cream.

Vegan Swiss roll recipe

Vegan chocolate Swiss roll

Here is an amazing recipe for making Vegan Swiss Roll.

This was one of the few things that I missed after going Vegan and it tastes amazing. You can also simply modify the recipe to make a Chocolate Swiss Roll that goes well with melted chocolate and banana.

I very much hope that some people find it useful!



Water, Flour, Vanilla extract, Silken tofu, Sugar, baking powder, noegg, lemon juice and salt.

Directions: Pre-heat oven to 175c or 350f

1) mix the following:

  • 1 Cup of tofu (Firm and silken)
  • 1 Cup of Sugar
  • 1 tb Lemon juice
  • 1 tb of Water (update – this must be warm in order to stop the swiss roll from cracking)
  • 1 tb of vanilla extract

Mix is all together until it is well mixed, smooth and fluffy.

2) mix the following

  • 1 Cup of flour
  • 2 tsp of baking powder
  • 3/4 tsp of salt
3) mix the following well making sure it becomes fluffy.
  • 1/4 cup of water
  • 4 tsp of no egg
4) Finally mix everything together and place in a flat tray on greased/oiled baking paper , smooth it out evenly and place in the oven at 175c.
Baking time should be around 10-12mins or until lightly brown.
Once baked, place topping in the middle of it and roll it up, for fillings like cream wait until it has cooled.

For an alternative recipe for a chocolate Swiss roll just place a quarter of the cup of flour with cocoa powder.
